Abstract

The nutritional and industrial potentials of three varieties of Abelmoschus esculentus (Okra) Seeds were evaluated using AOAC method, one way ANOVA was used to identify significance difference among the mean at 5% confidence level. The seeds' residual moisture (4.67-5.33%), crude fiber (8.33-9.83%), and available carbohydrate (440.17-447.00%) did not differ significantly. the ash content of Ex-samaru (6.17%) is significantly higher than Clemson spineless (4.83%) and NHAE-74 (4.67%), Compared to the NHAE-74 (25.67%), the crude lipid levels of Clemson spineless (24.33%) and Ex-samaru (23.50%) were significantly lower while  the energy values (Kcal/100g) significantly varied among varieties. The elemental analysis result (mg/100g) revealed that there was no significant difference in iron content while the calcium and phosphorus content significantly differed from one another, potassium content of Clemson spineless (350) was significantly higher than NHAE-74 (323), sodium content of Clemson spineless (8.57) was significantly higher than sodium and zinc of Ex-samaru (198.42 and 0.66 respectively) and NHAE-74 (201.31 and 1.02 respectively), copper content of ex-samaru (0.75) was significantly higher than both Clemson spineless (0.49) and NHAE-74 (0.45), manganese content of Clemson spineless (6.47) was not significantly different from NHAE-74 (5.15) but was significantly higher than Ex-samaru (3.48). Anti-nutritional factors, although there are no notable differences across all seed kinds, there are notable differences in the amount of oxalate present. The variations' mole ratios of anti-nutrient to element (bioavailability of element) do not differ considerably, although the clemson spineless and ex-samaru types' oxalate: calcium ratios do differ significantly from the NHAE-74 ratios. Overall, the results of the seed analysis showed that every seed has a higher bioavailability, is safe to eat, and is nutritious.
