This work is aimed at evaluating the physicochemical parameters, phytochemical screening and FT-IR spectroscopic studies of the ethanol extract, n-hexane extract, pure ginger and leached ginger samples. The ginger sample was extracted successively by Soxhlet extraction method with n-hexane and maceration using ethanol and deionized water. The samples of pure and leached ginger were subjected for physicochemical analysis to determined moisture content, ash content, acid-insoluble ash content and fat content. Furthermore, the phytochemical analyses were carried out on n-hexane and ethanol extracts, pure and leached ginger samples using standard method to test the different presence of secondary metabolites. The two extracts, pure ginger and leached ginger samples were characterized using FT-IR spectroscopy. The FT-IR analysis show the principal functional groups of alcohols (3326cm-1), alkanes (2972cm-1), alkenes (1634cm-1), aldehydes (1742cm-1), aromatics (1580cm-1), aromatic amines and aliphatic amines,
